House Spirits Distillery

A native Chicagoan, Erin has spent her entire career within different sectors of the hospitality industry before narrowing her focus after discovering her passion for spirits and cocktails while at the Boka Restaurant Group, one of Chicago’s most respected restaurant groups, During her time there, she developed and ran two unique cocktail programs at The Hotel Lincoln before pursuing her love for all things rum and tiki under the tutelage of her mentor, Paul McGee. While working in tandem with Paul for the past several years, Erin helped open Three Dots and a Dash, Chicago’s first modern tiki bar. The bar earned the 2014 Best New American Cocktail Bar award at Tales of the Cocktail, a spot on the World’s 50 Best Bars List (27), and the honor of Best Bar, 2014, from Chicago Magazine. After two years, Paul and Erin continued on to open Lost Lake, Paul’s second tiki-driven cocktail bar. Since its opening, Lost Lake has earned two James Beard nominations for Outstanding Bar Program, Imbibe Magazine’s Cocktail Bar of the Year distinction (2015), and the award for Best Bar, 2016, from Chicago Magazine.

In 2015, Erin was honored as a finalist for Star Chef’s Rising Star Mixologist of the Year awards. She is a three-time Speed Rack competitor and was voted to the Chicago wildcard position at the National Speed Rack Finals in 2015.

Erin now serves as National Director of Education and Advocacy for House Spirits Distillery, a leader in America’s craft distilling resurgence. Erin joined the company full-time in 2017, having served as a critical member of the House Spirits Distillery Brand Supporter team since 2014, where she worked hand-in-hand with bartenders and beverage program leaders to build affinity for the portfolio. Erin focuses on brand education and builds trade affinity for House Spirits’ portfolio, while developing and sharing a deep expertise on each of the company’s brands and their individual production processes. Erin also spearheads the trade education and introduction of Casa Magdalena, House Spirits Distillery’s rum collaboration with the Leal family in Guatemala. In Los Angeles, she further develops House Spirits’ deep relationships with supportive accounts, and nationally, she mentors and strengthens the House Spirits Distillery Brand Supporter team while fostering closer relationships with distributors across the country.
